Brewing InstructionsUse fresh cold bottled water that has been filtered or purified through a multi-step process of filtration, purification, and oxygenation. Different brands of water have different mineral contents and may affect the taste of the tea. Tea drinkers should try different types of water to suite their taste buds. Using fresh water ensures higher oxygen content which draws out the full flavor of the tea leaves. Avoid re-boiling water since this reduces the oxygen content. Green Tea Ratio

Japan Teas: Special Brewing Instructions Sencha Brewing Instructions Sencha's best features are its refreshing yet mellow aroma, and balance of sweet and bitter taste. It's better to brew Sencha with 176F (80C) water so that the refreshing aroma and the mildly bitter taste of Catechin and Caffeine are enhanced. If Sencha is brewed for too long, it may become a little too bitter. Brewed with a lower water temperature such as 167F (75C), the flavor will become more mellow and less brisk. Please try the different brewing times and temperatures to find the one you prefer. Genmaicha Brewing Instructions Place tea leaves in a pot. Pour boiling water into pot and allow tea to steep for about thirty seconds. (Note: For the second brew, pour into cups immediately after placing boiling water in pot.) Pour the same amount of tea in each cup. Because the density of substances in these types of tea is low it is all right to use boiling water.
