Brewing Instructions

Use fresh cold bottled water that has been filtered or purified through a multi-step process of filtration, purification, and oxygenation. Different brands of water have different mineral contents and may affect the taste of the tea. Tea drinkers should try different types of water to suite their taste buds. Using fresh water ensures higher oxygen content which draws out the full flavor of the tea leaves. Avoid re-boiling water since this reduces the oxygen content.

Green Tea

Ratio

  • 1 teaspoon / cup (6-8 oz)
  • For stronger flavor and higher quality green teas increase amount of tea used per 6-8 oz of water.

Steep Time and Water Temperature

  • Low Quality Green Tea 180-190 degrees at 2 – 3 mins.
  • Medium Quality Green Tea 160-170 degrees at 1-2 mins
  • High Quality Green Tea (can be steeped multiple times 2-3) 140-150 degrees at 30 seconds to 1.5 mins

White Tea

Ratio

  • 1.5-2 teaspoons / cup (6-8 oz)

Steep Time and Water Temperature

  • 180 degrees at 2-5 mins or longer depending on taste
  • White teas have a much more delicate taste than other teas, therefore longer brew times are often recommended to reap the full flavor benefits that this light tea has to offer.

Black Tea

Ratio

  • 1.5-2 teaspoons / cup (6-8 oz)

Steep Time and Water Temperature

  • Boiling at 3-4 mins or longer depending on taste
  • If milk, sugar, or lemon is to be added steep the tea for 4-5 mins.  Black teas are every bit as potent as coffee. Serve hot with the option of cream and sugar for best results.

Oolong Tea

Ratio

  • 2 teaspoons / cup (6-8 oz)

Steep Time and Water Temperature

  • 180 degrees to 190 degrees 3-4 mins

Japan Teas: Special Brewing Instructions

Sencha Brewing Instructions
Sencha For: 1 person
Tea leaves: 1 1/2 teaspoons
Water temperature: 176F (80C)
Amount of water: 4-6 oz
Brewing Time: 1 - 1 1/4 min.

Sencha's best features are its refreshing yet mellow aroma, and balance of sweet and bitter taste.  It's better to brew Sencha with 176F (80C) water so that the refreshing aroma and the mildly bitter taste of Catechin and Caffeine are enhanced. If Sencha is brewed for too long, it may become a little too bitter. Brewed with a lower water temperature such as 167F (75C), the flavor will become more mellow and less brisk. Please try the different brewing times and temperatures to find the one you prefer.

Genmaicha Brewing Instructions
Genmaicha For: 1 person
Tea Leaves: 1 heaping teaspoon
Water Temperature: Boiling
Amount of Water: 130 ml (6-8 oz)
Brewing Time: 30 sec.
Infuse Tea With Water At: 75°C (167°F)

Place tea leaves in a pot. Pour boiling water into pot and allow tea to steep for about thirty seconds. (Note: For the second brew, pour into cups immediately after placing boiling water in pot.) Pour the same amount of tea in each cup. Because the density of substances in these types of tea is low it is all right to use boiling water.
